WINEMAKING The richness of the fruit in its natural state meant that minimal intervention was required in the winery. Kept separate these parcels were left on skins for some time in order to develop the keen tannin structure, then fermented in stainless steel with the influence of French oak for complexity.
COLOUR Intense and deep ruby.
AROMA Blackcurrants and fruitcake-like dark fruits, plus hints of mocha oak.
PALATE Medium-bodied with rich fruit flavors, black pepper, cinnamon spice and subtle oak flavors. Excellent, long finish.
FOOD Pan seared beef and barbecued lamb shank.
