Byrne Old Vine Zibibbo
The old vines of the Zibibbo are from our single vineyard; grown on ancient sheet limestone with red desert sand overlay and planted on our estate in the 1970s.
Vintage 2019 saw hot, dry conditions which resulted in lower than average yields and with careful tendering produced this zesty wine. The concentrated flavours is evident in the grapes that were selected for their ripeness and acid balance for its first release. The low yielding fruit was gently pressed, cold settled and racked into ferment. A portion was influenced by seasoned French oak. The majority was tank fermented to retain varietal freshness. The zippy flavours and rich textures were woven together, resulting in medium to full-bodied white wine of complexity, layered with intriguing characters for a well balanced and lingering palate.

Colour Light white gold shimmer.
Nose Intense aromas of passionfruit and musk with hints of blossom.
Palate Alive with rose petals, tropical fruits and citrus. The silky palate texture has a crisp minerality, balanced with velvety length and zippy finish.
Food Pairing Freshly baked porcini mushroom and pesto pasta, soft shell chili crab and curries or passionfruit ice-cream and seasonal fruits. With its Italian origins, Zibibbo also favours cured meats, spiced pasta and slow roasted chicken.
