Semillon Sauvignon Blanc

Vintage 2020 saw lower than average yield due to the hot and dry conditions.  The quality of that fruit was outstanding with elevated flavour concentration. The fruit was picked in the cool morning just before sunrise then gently pressed to deliver the highest quality juice. Semillon is blended with Sauvignon Blanc from our estate vineyards to make this well-known blend, then fermented at 12-15 degrees Celsius to retain varietal characters. Picked in the cool of the evening at optimal ripeness, the wine was tank fermented to dry to maintain fruit intensity and freshness. The wine was bottled soon after finishing ferment, fined and filtered to preserve the fresh fruit flavours from the vine to glass.
