This 2018 Antiquarian Cabernet Sauvignon was both unexpected and exceptional. It was selected from our fruit from the Clare Valley estate and rose from adversity. Hand harvested at optimum maturity ensured the best possible outcome. Strict attention to detail was maintained in hand plunging, and temperature control for its 10 days fermentation in small open top fermenters. Matured in new French oak hogsheads for 18 months, the result is a classic expression of Clare Valley Cabernet Sauvignon.

Food Pairings Slow braised venison cooked in red wine served with portobello mushrooms and creamy garlic butter would be superb. Grilled lamb cutlets served medium rare. Richly
flavoured meats with herbs such as garlic, rosemary, thyme and mint.
